This Tomato, Broccoli and Parsley juicing recipe came about as we were trying to find a good alternative to lunch. We found out this recipe proved to be the perfect one for a light lunch during our last juice fast. We are currently trying to shed some extra weight, so we’ve been trying to find juice recipes that are fulfilling and healthy, but also light. The flavours really come through in this one and it’s really satisfying, without being full of carbs and sugars.
Here’s what you’ll need:
Tomato, Broccoli and Parsley Lunch Juicing Recipe
3 big Tomatoes
2 cm Broccoli chunk
1/2 Cucumber
1 Celery stalk
1/2 Lime
1 Parsley bunch (or even more!)
Start by juicing parsley, in between the other ingredients so as to avoid waste (if you’re using a centrifugal juicer). You can choose to peel the lime if you don’t like the taste, but it’s healthier to keep it on. As you can see on the ingredients picture, Kristján wasn’t that keen on it 😉
This lunch juice is full of goodness. The tomato contains lycopene, which is an antioxidant that possesses cancer fighting properties. Broccoli is a superfood, full of nutrients that make it anti-cancer, anti-viral and anti-bacterial. So eating broccoli regularly helps to protect against and also fight infections.
Cucumber is a great cleansing ingredient, very high in water content and also silica, which is a key component found in skin. It helps in to keep skin cells nourished and hydrated. The amazing celery is also a superfood, which among so many other things helps to lower high blood pressure and fights stress. And the lime is rich in Vitamin C, and also ha antiseptic properties.
I’d say that’s not bad for an ultra healthy and light lunch juicing recipe 🙂
