I know, I know… the name is a bit frightening. We were a bit unsure when we first read this juice recipe, but since we were doing this as part of a juice diet, we decided to try the original recipe and, if we didn’t like something, to change it afterward. That was exactly the case: we didn’t like the onion, so we omitted it when we did this recipe again.
I must say, without the onion this has become a favourite ‘lunch’ juice of ours. It’s absolutely delicious. Be generous with the parsley, choose ripe tomatoes, and try with the onion: you might like it! Push the parsley first, then tomato, red onion, lime and cucumber through your juicer. Mix your olive oil, salt and pepper in the juice, stir, pour over ice and enjoy!
tip: We prefer to use the limes unpeeled, it gives more taste and freshness.
Tabbouleh Juice Recipe for Juicer
1 big bunch of parsley (approx. 4 cups)
1 tomato
¼ red onion
1 lime (peeled)
½ cucumber
A dash of olive oil, sea salt and black pepper
